Three days is where it's worth leaving the Strip for a few hours. Run the two-day plan first, then use day three to get out into the desert — it's the single biggest thing most short trips skip.
Day three, morning. Pick one: a Grand Canyon helicopter tour that lands on the canyon floor and gets you back by early afternoon, or a Grand Canyon West Rim bus tour if you'd rather do it by ground with a Hoover Dam stop along the way. If you've already done the Grand Canyon on a previous trip, the Zion & Bryce Canyon day tour is the better call — different scenery entirely.
Day three, afternoon. If you skipped the desert tour and stayed local instead, this is a good slot for ATV or dune buggy runs through the Mojave, or a calmer kayak tour on the Colorado River through Black Canyon. Either way you'll be back in the city by early evening.
Day three, evening. After a full day outdoors, keep dinner simple — pizza or Mexican both work — and save the bigger night out for whichever of your first two nights you liked best. Three days in, most people are ready for one lower-key night before flying home.
